Delicious Rosemary-Spiked Fried Cabbage
Our sustainable living goal moved up a notch this year, as we progressed from growing more than just windowsill herbs to growing our own fruit and vegetables. And our vegepod worked a treat! We planted last Autumn and reaped the benefits immediately with fresh herbs and veg on demand. And from spring and early summer we basked in the glory of harvest time. From spring onions and garlic to swiss chard and cabbage grown within our vegepod, to mange tout, baby potatoes and apples grown in pots nearby.
But what’s the point growing vegetables if you’re not going to eat them! This delicious fried cabbage recipe was just one way of enjoying our cabbage harvest. It’s simple, delicious and uses five simple ingredients. Inspired by Gordon Ramsay I swapped the goose fat for a good olive oil, and shallots for our home-grown spring onions.

Rosemary-Spiked Fried Cabbage Recipe
Gordon’s stir fried cabbage recipe includes a full Savoy cabbage in which he advises to remove the core and shred. I used our home-grown leafy green Pixie cabbage and so removed the stems instead. The weight of cabbage you need really depends on how many you are cooking for. But do remember that cabbage freezes well so if you wash, slice, blanch and let cool you can freeze the extra cabbage easily for future dishes.
- Cabbage, shredded or sliced
- 4 tbsp Olive Oil
- 4 large spring onions, sliced
- a sprig of fresh rosemary
- 2 whole garlic cloves
- Remove the stems and slice the washed cabbage leaves. If you’re using savoy cabbage – Gordon recommends removing the core and shredding.
- Blanch the cabbage in a pan of boiling salted water for 3 mins, then hold under a cold tap to cool. Blanching helps to rid the cabbage of any nasties.
- Make sure to drain well. Once drained and cool any extra cabbage you have is suitable for freezing.
- Heat the Olive oil in a pan and sauté the sliced spring onions, rosemary sprig and garlic cloves for 5 mins, until golden.
- Discard the garlic and rosemary and toss in the cabbage.
- Stir-fry the cabbage and onions until heated through.
- Season and serve your delicious fried cabbage recipe as a side or as the main attraction.
For this example, I served this delicious fried cabbage recipe with Spanish Potatoes and fresh hake, oven-baked. To make Spanish Potatoes –
Simple Spanish Potatoes Recipe
This recipe was inspired by a BBC Good Food Recipe.
- 2 tablespoons of Olive oil
- 3 tablespoons of tomato purée
- 1 tablespoon of smoked paprika
- 800g of white potatoes, cut into small cubes
- 4 garlic cloves, squashed in skin
- juice ½ lemon (optional)
- Handful of parsley, roughly chopped
- Heat oven to 180C or 160C fan assisted.
- Mix the oil, tomato purée and paprika together in a bowl.
- Toss in the potatoes and coat them in the mixture – thoroughly.
- Place the coated potatoes on a baking tray with the squashed garlic cloves.
- Season with salt and pepper
- Roast for 40 mins, turning halfway through.
- Potatoes are ready when they’re a little crisp on the outside and soft on the inside.
- In the last five minutes, sprinkle over the lemon juice and parsley and return to the oven. Another option is to add chopped parsley before serving.
