“Ever get a real goo for some homemade Irish Soda Bread, you know the type that your Granny used to bake?
My Granny Smith used to whip up the most amazing soda bread in minutes. The smell of it baking in the Aga stove, its golden crust when it was baked. And it was always baked to perfection! She could rustle a bread up with her eyes closed and there was no such thing as measuring using weighing scales. Not at all. It was a cup of this and a pinch of that. Fantastic! I miss her and wish I had asked her to show me more.”

Irish Recipes for St Patrick’s Day #2 – Irish Shortbread
‘Shortbread originated in Scotland. And the Scots are renowned for it. Irish shortbread is made in much the same way as the original. Except that Irish shortbread is made with Irish butter, and Irish flour. It could have been a hattrick with Irish sugar but alas that industry has yet to be revived in Ireland. A combination of Irish flour and Irish butter gives theses cookies a light and delicious buttery taste.’

Irish Recipes for St Patrick’s Day #3. – Irish Rock Buns
I baked these for my sister and her Fiancé a couple of weeks ago when they popped in to say hi. They were served with butter, strawberry jam and freshly whipped cream and they went down a treat. They were really light buns, and their texture was very crumbly which I have to say I worried about as soon as I served them. But my sister pointed out how they really complimented the jam and cream as otherwise she felt they might have been too heavy. She’s probably right. They taste really good but they can be messy so be warned there’ll be plenty of finger licking.

Irish Recipes for St Patrick’s Day #4 – Irish Fish Pie
‘I was looking for recipe for an Irish Fish Pie over the weekend. I’ve made it before but cheated with the sauce. This time I wanted to create the dish from scratch, but I wanted a simple recipe. A recipe that my family would enjoy, and one we can rustle up whenever we take the notion.’

Irish Recipes for St Patrick’s Day #5 – Irish Beef Stew
‘Traditionally this dish is cooked on the hob, but nowadays on cold wintery days – we plop all the ingredients together into our Le Creuset Dutch Oven and slow cook it in the oven for 2 – 2.5 hours. It’s simple, hearty, tasty and if you’ve any left – it tastes even better on day two. Serve with buttered homemade brown bread, or crusty rolls, sliced white bread or just as it is.’

Irish Recipes for St Patrick’s Day #6 – Dublin Coddle
‘Combining my love of travel and culture with what a new country or city has to offer me as a dining experience has had me eating and nibbling on everything from silk worms to grasshoppers and pigs intestines to dried squid. Most of wish I’d rather not ‘try’ again. However nothing had prepared me for the evening that Patrick, a ‘True Blue’ Dubliner, my then boyfriend and now husband, decided to cook me a Dublin Coddle.’
