I Love a Good Pancake
& an Easy Pancake Recipe
The pancakes I grew up with as a child and now cook for my own children are crêpe style as opposed to American style. Savory with spinach and cheese, or sweet with chocolate, I love my Irish pancakes! The official day to eat pancakes in Ireland is on ‘Pancake Tuesday‘, when the majority of the country get their flour and pans out, rustle up a batch and smother them in fruit, cream, chocolate or syrup. I love the simplicity of freshly squeezed lemon and sugar sprinkled over mine. And I don’t need an official day because in our household we enjoy them weekly.

The best thing about cooking pancakes is that they are so easy to make. You only need five ingredients. And you’ll most likely find these in your kitchen anyway. Flour, milk, egg, salt and butter or oil to fry! Simples.
Easy Peasy Pancake Recipe
Ingredients
- A cup of plain flour (120g)
- A cup of milk (or you can add half milk, half water) (approx 240ml)
- One large egg
- A good pinch of salt
- Butter or oil to fry.
Method
- Sift the flour.
- Add the eggs, milk, water and salt.
- Beat.
- Place in the fridge for an hour if you have time – otherwise just start frying.
- Heat a lightly oiled pan and add a scoop of pancake mixture.
- Brown on both sides.
- Serve how you like it.
*Note: To make the pancakes sweet you can add one teaspoon of vanilla extract and one tablespoon of sugar.
