Irish Smoked Salmon and Scrambled Eggs
This recipe is easily the easiest and one of the tastiest ways to get a vitamin boost into your week. It contains Irish Smoked Salmon, Irish Free Range Eggs, Brown Bread and Butter. A simple dish but tasty and very effective.
Let’s break it down … Salmon is packed with protein and vitamins including Vitamin B12, add to that the fact that it is a natural source of Omega-3 fatty acids which we all need more of in our diet, make it Irish and organic and it really is a ‘Super Fish’. Free Range Eggs are full of protein, iron and vitamins. Brown Bread depending on its ingredients can be a much healthier option to white bread and be a source of the fibre your body needs, the whole grains used are also sources of vitamins including Vitamin E which is great for your immune system and your skin. Finally add some Butter, which up until recently had a bad reputation but is now the saviour of spreads because it is rich in Vitamin A, D and E.
This meal is quick to prepare in the morning for breakfast – It would make a tasty alternative to the Irish Fry we have all indulged on, on a lazy weekend or even on Christmas morning. It’s great for lunch, a quick and easy dish to serve before dinner or even as an evening meal … which satisfied my belly this evening.
Irish Smoked Salmon and Scrambled Eggs – Serves One (just multiply for more)
Ingredients:
- Irish Smoked Salmon
- Free Range Eggs – fresh from the local farmers market or from the supermarket – free range always taste better
- Brown Bread – if you can bake your own go for it. I love this quick recipe from Wholesome Ireland which only takes five minutes, but if you’re not in the mood to make your own a shop bought option can always be chosen
- Portion of Butter
- Splash of Milk
- Olive Oil
- Salt & Pepper to Season
- Wedge of Lemon
Directions:
- Open the packet of Salmon and dish out your prefered amount onto a plate
- Cut a wedge of lemon for the salmon (optional)
- Cut two slices of Homemade Brown Bread
- Spread the butter over the bread
- For the Scrambled Eggs
- Crack two eggs into a cup or bowl
- Add a splash of milk and beat with a fork
- Add Salt and Pepper to season
- In a small saucepan add a splash of Olive Oil
- Heat and add the beaten eggs
- With a wooden spoon, stir the eggs like your life depends on it, making sure to cover every inch of the saucepan base as the eggs can stick
- When the eggs look like they are just about cooked and are creamy in texture remove from the heat
- Spoon onto the plate
To Serve:
- On a plate with the Smoked Salmon, buttered Brown Bread and wedge of Lemon add the freshly cooked Scrambled Eggs
- Add another grind of cracked black pepper to the Scrambled Eggs (optional)
- Add a squeeze of lemon to the Salmon (optional)
- Pile the Salmon, then Scrambled Egg onto the buttered Brown Bread
